For the filling
2 tbsp cornflour
3½ oz golden caster sugar
2 lemons (zest and juice)
1 small orange (juice)
4 oz butter
3 egg yolks + 1 whole egg
For the meringue
4 egg whites
7 oz golden caster sugar
2 tsp cornflour
Instructions
Combine flour, butter, icing sugar, egg yolk, and cold water in a bowl. Mix until smooth. Shape into a disc, wrap, and chill overnight.
Preheat oven to 350°F. Line a fluted tart tin with the pastry and chill. Blind bake with beans for 15 minutes, then remove and bake for 8 more until golden.
Mix cornflour, sugar, and zest in a saucepan. Add strained lemon and orange juice, stir over medium heat until thickened. Remove from heat, add butter, then whisk in egg mixture. Reheat until smooth and thick.
Pour filling into the pastry shell. Whip egg whites, gradually adding sugar until stiff peaks form. Spread meringue over the filling, sealing the edges.
Bake for 20 minutes until lightly browned. Cool briefly in the tin, then transfer to a wire rack. Chill for two hours before serving.
